This unique coffee is the result of innovation in the local coffee craftmanship process, applied to local rare high quality coffee cheries. Selectively handpicked from the Cumplida Farm plantations in Nicaragua, the coffee is sprayed and left in contact with specific natural yeasts for 72 hours.The yeast never penetrates the beans and disappears at hulling and roasting. But putting the coffee cherries in contact with the yeast allows specific natural tasty molecules to appear within the coffee bean. Those natural flavors mature inside the bean during process. They then releas their best potential at brewing: a smooth exotic and well-balanced taste.
This single origin coffee is roasted using a 85/15 split roast technique. The first batch reaches a dark roast in a short time, while the second split is even darker but also short. This technique allows us to create a little intensity while preserving the fruitiness and delicate aromas of this coffee. This surprising and unique coffee delights with wild fruity notes reminiscent of candied cherry and pomegranate.
